The first thing that you’ll need to do is make your cannabutter.  Measure out 2 cups of delta 8 flower buds and sprinkle them evenly onto a parchment-lined baking sheet.  Then, bake them at 250 degrees for 25 minutes which activates the delta 8 THC through a process called decarboxylation.

Now, you can coarsely grind the freshly baked delta 8 flower and pour it into a small saucepan, along with 1 cup of water and 2 sticks of unsalted butter.  Place on low heat and simmer for 2 and a half hours, never allowing it to reach a full boil.  Finally, strain the infused butter into a jar and refrigerate for up to 6 months.

  • 2lbs pitted cherries 
  • 1 cup self-rising flour

Preparation: 

  1. Preheat your oven to 350 degrees, and line a 9-inch pie tin with parchment paper.
  2. Pour the cherries into the tin, making an even layer.
  3. Combine the remaining ingredients, minus the butter, into a mixing bowl, whisking together evenly.  Then, cover the cherries in the mixture, in an even layer, before pouring the melted butter evenly on top.
  4. Place in the oven to bake for 45 minutes, or until the top is golden-brown.

Shortbread Cookies 

Shortbread cookies, with their rich and buttery taste, are a great alternative to the more popular chocolate chip variety.  And, they’re just as easy, so there’s no reason not to add them to your repertoire.

Ingredients:

  • 2 ½ cups all-purpose flour 
  • 1 cup cannabutter, softened at room temperature 
  • ½ cup white sugar
  • 1 tsp vanilla extract 
  • 1 tsp salt 

Preparation:

  1. Preheat the oven to 300 degrees, and line a 9-inch pie tin with parchment paper.
  2. Beat all of the ingredients together into a smooth dough, using an electric mixer.
  3. Turn out the dough into the pie tin, pressing the dough down with your hands.  Sprinkle the top with white sugar.
  4. Place the tin into the oven to bake for 25-30 minutes, or until the edges turn golden-brown.  Slice the shortbread into wedges after it has cooled for about 30 minutes.

Brownies

Of course, you can never go wrong with a classic, and one of the most popular edibles of all time is the brownie.  This recipe gives you that rich and fudgy goodness in about an hour tops.

Ingredients:

  • ¾ cup cannabutter, melted in a saucepan on low heat
  • 1 ½ cups white sugar
  • ½ tsp salt
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2/3 cups all-purpose flour
  • 9 tbsp unsweetened cocoa powder

Preparation:

  1. Preheat your oven to 300 degrees, and line an 8-inch baking tin with parchment paper.
  2. Mix together the butter, sugar and salt in a large mixing bowl.  Whisk in the eggs, one at a time, and add the vanilla.
  3. Pour in the flour, and then whisk until you get a smooth batter.  Then, whisk in the cocoa powder.
  4. Pour the brownie batter into your baking dish.  Bake the brownies for about 45 minutes, or until they’ve set. 

Blueberry Muffins

Blueberry muffins are a versatile option, since they make for a great breakfast, snack or dessert.  These muffins are moist and fluffy, just as they’re supposed to be.

Ingredients:

  • 1/2 cup cannabutter, softened at room temperature 
  • 3/4 cup white sugar
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup milk (plant-based milk can be used)
  • 1 cup fresh or frozen (thawed) blueberries 

Preparation:

  1. Preheat your oven to 400 degrees.  Place cupcake liners into a muffin tin.
  2. Cream the butter and sugar together using an electric beater in a large mixing bowl, and then add the egg and vanilla.
  3. Gradually pour in the flour while continuously beating on low, and then the salt and baking powder.  
  4. Put the beater aside and carefully whisk in the milk until a smooth batter forms.  Then, fold in the blueberries.  
  5. Fill each cupcake liner with the batter, 2/3 of the way up.  Bake for 20 minutes, or until a toothpick stuck into the center comes out clean.

Savory Cheddar Scones

A fantastic way to bake something savory is to make these delicious scones, which are rich in cheddar to satisfy your cheese cravings.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • ¼ cup cannabutter, chilled in the refrigerator and cut into small cubes
  • 2 large eggs
  • ½ cup heavy cream
  • 6 ounces grated sharp cheddar cheese 
  • ¼ cup chopped chives

Preparation:

  2. Combine the flour, baking powder and salt with in a large mixing bowl.  With an electric beater, mix in the 2 eggs and heavy cream, and stop just as the mixture comes together.  
  3. Place the butter into the bowl, and use your hands to break it up until you have a coarse, sand-like texture.
  4. Use a wooden spoon to gently fold in the cheddar cheese and chives until they’re just evenly incorporated.
  5. Turn the dough out onto a floured surface, and roll it to about about 1 inch thickness.  Cut into 6-8 wedges.
  6. Bake for 25-30 minutes, or until the top just turns golden-brown.
