#1: Broccoli and Corn Salad  

If you’re looking for a salad that incorporates the flavors of the season, but still want something a little heartier than the usual offerings, this delicious broccoli and corn salad is the way to go.

Ingredients:

  • 2 heads of broccoli, cut into bite-sized florets
  • 3 ears of corn, shucked
  • 2/3 cup pine nuts
  • 1 cup fresh mint leaves, roughly chopped
  • 2/3 cup crumbled feta
  • Juice of 2 lemons
  • ½ cup olive oil, + 2 tbsp
  • 2 droppers Delta 8 Tincture 
  • Salt and pepper 

Preparation:

  1. In a large sauté pan, cook the broccoli florets on medium until they’re easy to pierce with a fork, and the outside is charred.  
  2. Place into a large salad bowl.
  3. Cook the corn in the same pan on all sides, until the outside becomes a golden color.  
  4. Remove from heat and run your knife down each side of the ears to end up with chunks of kernels to be added to the bowl.
  5. Toast the pine nuts in a small frying pan, just until they turn golden-brown and add them to the bowl.
  6. Add the remaining ingredients to the salad bowl.
  7. Toss well.

#2: Bruschetta  

Some homemade bruschetta lets us enjoy the freshness of the season while offering a tasty snack.  Or, it can make for a creative side dish that can use up the excess of tomatoes in your garden.

Ingredients:

  • 1 baguette, sliced into 1/2 inch thick slices
  • 3 tbsp + 2 tbsp olive oil, divided
  • 1 garlic clove, peeled
  • 2 beefsteak tomatoes, stemmed and diced
  • 1 small shallot, peeled and coarsely chopped
  • About 15 basil leaves, roughly chopped
  • 2 tbsp balsamic vinegar
  • 1 dropper of Delta 8 Tincture 
  • Salt n’ pepper 

Preparation:

  1. Pour the 3 tbsp of olive oil in the pan and bring the heat to medium-high.
  2. Rub the garlic clove along each of the bread slices, only on one side.  
  3. Then, place that side down onto the hot pan.  
  4. Flip after about a minute to toast each slice (may need to be done in batches).
  5. Meanwhile, mix the remaining ingredients in a bowl.  
  6. Place a large spoonful of the mixture onto each bread slice.

#3: Chicken Salad  

Chicken salad is an easy go-to when you want something fresh and light to eat, but don’t want it to take up your whole afternoon.  We use store-bought rotisserie chicken to save you even more time.  This chicken salad is great for sandwiches and wraps, or you can add a scoop of it to a traditional salad.

Ingredients:

  • 1 rotisserie chicken, skin removed, meat shredded, and bones discarded
  • 2/3 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 3 ribs celery, diced
  • 1 small shallot, peeled and diced
  • Salt and pepper
  • 2 droppers of Delta 8 Tincture 

Preparation:

  1. Combine all of the ingredients in a large salad bowl and mix well.

#4: Banana Cream Pie  

Banana cream pie is an indulgent dessert that’s still light enough for the hottest days of the year.

Ingredients:

  • 1 store-bought graham cracker crust 
  • 2 ripe bananas, peeled and sliced
  • 2 ½ cups milk
  • 2 packages instant vanilla pudding
  • Whipped cream (store-bought or homemade)
  • 2 droppers Delta 8 Tincture 

Preparation:

  1. Into a large mixing bowl, combine the milk and the pudding packages.  
  2. Whisk vigorously until the pudding mixture comes together.  
  3. Stir in the delta 8 tincture.
  4. Place half of the banana slices on the bottom of the pie crust. 
  5.  Pour the vanilla pudding mixture on top.  
  6. Arrange the remaining banana slices over the pudding.
  7. Top with whipped cream.
  8. Refrigerate for about 3 hours to set.

#5: Chocolate Avocado Pudding 

This rich and decadent chocolate pudding is just as mouthwatering as the more traditional style, yet it offers a fresh dose of healthy fats in the form of avocado, while being completely vegan and dairy-free.

Ingredients:

  • 2 ripe avocados, peeled and pitted
  • 4 tbsp cocoa powder
  • 4 tbsp liquid sweetener (honey, agave, etc.)
  • ½ cup coconut milk
  • 1 tsp vanilla extract
  • 1 dropper Delta 8 THC Tincture 

Preparation:

  1. Combine all of the ingredients in a food processor before transferring to a bowl to serve.
